We’re about to get on the road to Tallahassee for today’s FSU football game! But first I wanted to post about this recipe that is perfect for weekend breakfast/brunch.
I followed the directions, but changed up some of the ingredients. Start by adding a mixture of 1 bag of hash browns (we used Simply Potatoes plain hash browns), 1/2 cup cheddar cheese, salt + pepper and 2 tablespoons of olive oil to muffin/cupcake pan and make room for the rest of the ingredients in the center. Bake at 425 for about 17 minutes.
While that is in the oven, brown some sausage (we used Jimmy Dean maple sausage). Then beat together 6 eggs and mix in about two handfuls of fresh, roughly chopped spinach. Add in the sausage.
Remove the pan from the oven and ladle the egg mixture over each hash brown “basket.” Lower the oven to 350 degrees and bake for about 15 minutes. I topped ours off with some asiago cheese, too, because I could.
It’s not a difficult recipe, but it’s more fun than the typical eggs + sausage breakfast. The hash browns make the outside crispy, but the eggs were fluffy and the spinach added some good nutrients, too! You really could add whatever you wanted to this — broccoli, chicken… whatever you like!
