David’s boss is also a farmer and recently brought in organic vegetables for the office. I was excited when David brought home zucchini and yellow squash because I like to eat it but I would never buy it — especially because David isn’t a huge fan.
obsession interest in Pinterest led me to a recipe for zucchini chips. This seemed like something that both David and I would enjoy (it has parmesan cheese — enough said), and I was right!
The original recipe calls for two large zucchini, but the ones David brought home are massive so we only used one.

David made Italian breaded chicken to go along with the zucchini chips. He coated the chicken in an egg wash, dipped it a mixture of Italian bread crumbs and parmesan cheese and cooked it on the stove. We usually bake this, but the oven was occupied!
